Cream Puff Filling: Just the Recipe

Recipe From my Great-Grandma Mae. Makes approximately 2 dozen cream puffs.

Ingredients:

  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/3 cup flour
  • 2 cups milk
  • 4 egg yolks
  • 2 tsp vanilla

Instructions:

  1. Combine sugar, salt, and flour in medium saucepan.
  2. Place over medium heat.
  3. Whisk in milk.
  4. Cook until just boiling and beginning to thicken.
  5. Remove from heat.
  6. Beat eggs together in medium bowl.
  7. Add half of the milk mixture to the eggs, a little bit at a time. Stir vigorously to avoid cooking eggs.
  8. Add egg mixture back into milk mixture.
  9. Bring to low boil.
  10. Remove from heat.
  11. Stir in vanilla.
  12. Pour into bowl, and cover with plastic wrap touching the custard to avoid skin forming.
  13. Chill until completely cool.
  14. Follow assembly instructions found in my cream puff shell recipe.
  15. Enjoy!
